Bean and Leek Mash

This bean mash is full of flavour and is a perfect accompaniment served warm with stews, steaks and fish.  Or you can have it cold on crackers or toasts.  This is a very versatile dish.

Bean and Leek Mash

What you will need

  • 30ml Canola oil
  • 400g Leek, chopped
  • 15g Parsley, chopped
  • 12g Basil, chopped
  • 40g Chervil, chopped
  • 8g Oregano, chopped
  • 700g Cooked haricot beans
  • 70ml Lemon juice
  • 65g Tahini
  • 175ml Cooking liquid from beans
4 serves

Method

  1. Heat canola oil in a large pan
  2. Gently sauté leek until soft
  3. Add the herbs and cook gently for another minute
  4. Mix beans, tahini, lemon juice and herb mixture together
  5. Mash for a lumpy consistency or blend in food processor for a smooth consistency
  6. Add cooking liquid to get the desired consistency
