Delicious recipe for Christmas time, thanks to Beef and Lamb NZ
To make marinade:
1. Combine honey, mustard, rosemary, pepper, lemon zest and garlic in a small bowl
2. Rub mixture into lamb
3. Cover and refrigerate overnight
To cook on the BBQ:
1. Lightly oil a preheated BBQ and grill the butterflied lamb over a low steady heat
2. Turn several times and baste with any leftover marinade
3. Cook for 30-35 minutes
4. Remove from the heat and rest in a warm place, covered, for 10-15 minutes before carving
5. Serve with your favourite seasonal vegetables or salad

To cook in the oven:
1. Preheat oven to 190⁰C
2. Place the marinated leg of lamb on a rack over a rosting tray, cut side facing up
3. Fan-bake in the oven for 15 minutes, then turn the lamb over and cook for another 10-15 minutes before carving.

How the heck did this get filed under cheap affordable. Per serve the price may sound reasonable but the upfront capital cost of purchasing the meat, honey & garlic would be more than a lot of budgets could handle. At my supermarket the cheapest honey is at least $5, garlic over $1 per bulb & I don’t even look at lamb roasts because they’re over $30 whereas I can get a pack of good mince (lamb, pork or beef) for under $10.
