Ginger Teriyaki Edamame

Edamame are soy beans in their shells.  These are pre-cooked and only need to be heated before eating.  The sauce in this recipe is a delicious addition.  To eat them simply pop the beans from out of the pod straight into your mouth.

Ginger Teriyaki Edamame

What you will need

  • 1tsp sesame oil
  • 400g frozen edamame
  • 1tsp ginger, crushed
  • 1Tbsp low sodium soy sauce
  • 1Tbsp mirin
  • 1Tbsp lime juice
  • 1tsp toasted sesame seeds
4 serves

Method

  1. In wok or large frying pan heat the sesame oil
  2. Add the frozen edamame and stir fry until edamame have defrosted and are beginning to go black in places
  3. Add crushed ginger and stir through
  4. Add soy sauce, mirin and lime juice and stir fry until all the liquid has evaporated or is stuck to the edamame
  5. Remove from heat and stir through sesame seeds
  6. Serve as a snack with drinks or a side dish

Variation:

Edamame can be bought from most Asian supermarkets in the frozen vegetable freezer.

Although the sauce is a great addition, in Japan edamame are traditionally eaten simply boiled.
