Marinated chicken thighs

Marinated chicken thighs

What you will need

  • 4 Chicken thighs bone in, skin removed
  • 1 clove Garlic clove, crushed
  • 1 tsp Ginger, minced
  • 1/4 cup Orange or pineapple juice
  • 1 tsp Soy sauce, low salt
  • 4 slices Lemon, sliced
  • 4 Thyme sprigs

Method

  1. Place chicken in a plastic bag.
  2. Combine garlic, ginger, juice and soy sauce and add to chicken.
  3. Place bag in a dish and refrigerate for 2 hours, turning the bag occasionally.
  4. Preheat oven to 180°C.
  5. Remove chicken from marinade and place in a baking dish.
  6. Place a lemon slice on each thigh.
  7. Bake in preheated oven for 25-30 minutes or until chicken is thoroughly cooked.
  8. Garnish with the thyme sprigs.
  9. Serve with roasted vine tomatoes.
