Courgette Fritters

A quick, easy meal packed with vegetables leaves time to relax after the excitement of the holidays and enjoy the long summer evenings. Picking a good variety of colourful vegetables and fruits for a salad will help ensure a good dose of antioxidants to keep you and your family healthy.

Courgette Fritters

What you will need

  • 2 courgette (if not home grown then you may want to use double the number of skinny supermarket ones)
  • 1/2 cup wholemeal flour
  • 1/2-3/4 cup white flour
  • 2 tsp baking powder
  • 1T olive oil
  • 2 eggs
  • 1/2-1 cup trim milk
  • 60g reduced fat feta(chopped)
  • 1-2 tsp mixed herbs
  • sprinkling of paprika

Method

  1. Grate the courgette and place in a mixing bowl. Add flours, baking powder, olive oil and eggs, then mix thoroughly
  2. Add trim milk and mix to pikelet batter consistency
  3. Gently stir in the reduced fat feta, herbs and paprika
  4. Heat a non-stick frying pan and add a little olive oil if necessary. Spoon the batter in to create large pikelets, the mixture should make about 10 fritters
  5. Cook on both sides until lightly brown. Be careful not to let the pan get too hot as the mixture needs time to cook all the way through
  6. Serve warm with salad
