Watermelon & cucumber salad

What you will need

  • 1/4 Watermelon, peeled, deseeded and diced
  • 1 Cucumber, peeled, deseeded and diced
  • 2 Tbsp Mint leaves, chopped and sprigs for garnishing
  • 2 Tbsp Yoghurt, natural, reduced fat
  • 2 Tbsp White vinegar
  • 2 tsp Brown sugar
  • 1 Garlic clove, crushed
  • 1/4 cup Vegetable oil
4 serves

Method

 

  1. Place watermelon in a sieve and leave to drain for about 30 minutes.
  2. Place cucumber in another sieve and leave to drain.
  3. Mix chopped mint and yoghurt together and leave in refrigerator.
  4. Combine drained watermelon and cucumber in a serving dish.
  5. Combine dressing ingredients in a jar.
  6. Shake dressing and pour over watermelon and cucumber.
  7. Garnish with mint sprigs.

The list of ingredients makes no mention of yoghurt. It is only when you read the method that you read of the yoghurt, but are not given an amount?

I’m so sorry that was an oversight on our behalf.  I have altered the recipe to include two tablespoons of natural yoghurt.  Many thanks for your feed back.  Enjoy
