Food safety procedures

Food safety procedures provide guidelines for some of the highest risk activities in a food service so as to keep the food safe. Components include:

  • ensuring refrigerated food is kept cold enough
  • ensuring hot food is kept hot enough
  • the handling of poultry and other potentially hazardous foods.

As a foundation for the development of food safety procedures, please download the NZFSA Food Control Plan (food service and catering) found at www.nzfsa.govt.nz (type 'food control plan' into the search box). While this document has been developed specifically for events such as galas, food fairs, festivals etc, it also contains pertinent information relating to the food preparation activities undertaken in a school food service. Included in the information are handy tips on personal hygiene, preparing, cooking, cooling, reheating and displaying food. Food safety monitoring

Good procedures are monitored for their success and changed to address problems. Food safety monitoring consists of the daily and weekly records of temperature checks and other food safety practices followed. These can be in your own format or you may like to use those in the NZFSA Food Diary for Food Service and Catering (also found at www.nzfsa.govt.nz or by ordering a hard copy with the Food Control Plan).

NB: If school canteens are registered with their local councils, full food safety resource packs may be obtained from them.
