Banana pikelets with berry compote

These pikelets can be whipped up in minutes for a quick breakfast or dessert.

Method

Banana Pikelets

  1. Mix together the mashed banana with the egg
  2. Heat a large non-stick or well seasoned cast iron frying pan and add oil
  3. Cook pikelets in tablespoon amounts  until browned on each side

Berry Compote 

  1. Place frozen or fresh berries into a saucepan with a lid on
  2. Heat slowly over a low heat until berries are cooked and most of the liquid has evaporated
