Chickpea fattoush salad

This is a delicious salad full of flavour and amazing coloured vegetables. Enjoy this as a side salad or a light meal by itself.

Method

  1. Heat oven to 200°C
  2. Lay Lebanese bread out on a baking tray
  3. Sprinkle with sumac
  4. Bake until crisp
  5. Cool and break into bite sized pieces
  6. Mix all other ingredients together with Lebanese bread
  7. Serve within 4 hours of mixing to ensure Lebanese bread is still slightly crunchy

    lemon juice
  • 1 1/2 tbsp
    olive oil
  • 1 can 
    canned chickpeas, drained and rinsed
  • 2 punnets 
    cherry tomatoes, halved
  • 2 medium 
    Lebanese cucumbers, diced
  • 1 medium 
    red capsicum, diced
  • 1 small 
    red onion, finely sliced
  • 1 cup
    Italian parsley, chopped
  • 1 cup
    fresh mint leaves, shredded
