Chilli bean quesadillas

Providing you have some chilli beans on hand these quesadillas are a super easy and convenient light meal. They are absolutely superb served with a green salad and some avocado or tomato salsa

Method

  1. Mix together the chilli beans and corn kernels
  2. Spread the chilli beans and corn evenly over half of the tortillas
  3. Sprinkle the grated cheese over the chilli beans
  4. Place the remaining tortillas on top of the chilli beans and cheese
  5. Heat a frying pan over a low to medium heat without any oil
  6. Place the filled tortillas in the frying pan and cook slowly flipping after approximately 3-4 minutes until both sides are a golden brown
  7. Cut in half and serve hot with a salad
