Chocolate mousse with strawberries

A lovely, clean tasting mousse with refreshing strawberries. A perfect end to a meal.

Method

  1. Melt chocolate
  2. Heat water
  3. Dissolve gelatine in water
  4. Mix melted chocolate with water and gelatine thoroughly
  5. Defrost raspberries and puree until smooth
  6. Mix raspberry puree into chocolate mixture
  7. Put mixture into a large metal or glass bowl
  8. Place this bowl inside a larger bowl filled with ice and water
  9. Whisk the chocolate mixture over the ice until it thickens and resembles lightly whipped cream
  10. Pour into a smaller container and refrigerate for at least 2 hours before serving
  11. Take stems off strawberries and cut into quarters
  12. Spoon mousse on top of strawberries in serving bowls
