Cocoa rice

This is a delicious rice pudding with a great chocolatey and coconut flavour.  Young and old will love it.

Method

  1. Place all ingredients, except coconut cream, in a saucepan.
  2. Bring to the boil and then lower to a gentle simmer, stir occasionally to avoid it sticking to the bottom
  3. Continue to cook slowly until the rice is cooked and covered in a creamy chocolate sauce (or desired consistency) about 30-40 minutes.
  4. Take off heat and add the coconut cream and stir through.

    medium grain rice

    water or coconut water
  • 2 tbsp
    cocoa, or koko Samoa, grated
  • 1½ tbsp
    sugar
  • lemon leaves
  • 2 tbsp
    coconut cream
