Courgette fritters
This recipe uses zucchinis (courgettes) and is an easy healthy, quick, meal packed with vegetables and herbs.

Method
- Grate the courgettes (zucchinis) and place in a mixing bowl. Add flours, baking powder, olive oil and eggs, then mix thoroughly
- Add trim milk and mix to pikelet batter consistency
- Gently stir in the reduced fat feta, herbs and paprika
- Heat a non-stick frying pan and add a little olive oil if necessary. Spoon the batter in to create large pikelets, the mixture should make about 10 fritters
- Cook on both sides until lightly brown. Be careful not to let the pan get too hot as the mixture needs time to cook all the way through
- Serve warm with salad
