Easy beef curry

This tasty curry is easy to make and can be prepared a day in advance for a convenient meal.

Method

  1. Heat oil in a large pot
  2. Add onion and saute until soft and beginning to brown
  3. Add beef, garlic and curry powder and saute until the beef has browned lightly
  4. Add canned tomatoes, tomato paste and water
  5. Bring to a gentle simmer
  6. Cover and cook slowly for approximately 2 hours or until the beef is tender
  7. Add more water if it looks to be drying out too much
  8. Serve with coriander sprinkled on top
