Fruit bread toast with ricotta
Ideal for breakfast or brunch

- Toast fruit bread until crisp and golden. Keep warm.
- Place ricotta, icing sugar and vanilla essence in a bowl and mix gently to combine
- Place strawberries, passionfruit and maple syrup in a bowl and stir gently to coat the berries with syrup
- Put two slices of toast on a plate, top with a generous dollop of the ricotta mixture and finish off with a couple of generous spoonfuls of the berry mix.
Try this recipe with a mix of either banana and passionfruit or mango and passionfruit
