Ginger melon balls

An easy, cool, summer fruit appetizer

Method

  1. Soak the crystallised ginger in boiling water for 5 minutes to remove the sugar.  Drain and chop finely
  2. Cut the melons in half and discard the seeds  
  3. Using a melon baller, scoop the melon into balls and place in to a bowl
  4. Reserve the juice and mix with the green ginger wine and ginger
  5. Pour over the melon balls. Marinate in the refrigerator for at least 2 hours before serving 
  6. Serve chilled garnished with mint

Tip

A small watermelon may be used in place of the rock or prince melon

    ginger crystallised

    melons rock or prince, medium-sized
  • 1/4 cup
    green ginger wine
