Kumara salad

This tasty salad will go well with many dishes including fish, chicken or a vegetarian meal

Method

  1. Steam or boil the kumara until cooked through then drain and allow to cool
  2. To make the dressing mix together the lemon juice, yoghurt, mayonnaise and curry powder
  3. Gently mix together cooked kumara, banana or apple, spring onion, sesame seeds and the dressing

Tip

To toast sesame seeds heat them in a dry frying pan over a medium heat.  Stir with a wooden spoon until lightly golden brown then remove from the pan.
