Potato, leek and smoked fish soup

This is a take on the traditional leek and potato soup. A small amount of smoked fish goes a long way in this recipe.

Method

  1. Heat oil in a large pot
  2. Add leek and cook gently until softened
  3. Add garlic and potato and sauté for one minute
  4. Add water and stock powder and cook until potato is soft
  5. Remove from heat and blend until smooth
  6. Add evaporated milk, smoked fish and parsley
  7. Bring back to heat and serve
