Spanish chicken pie

This Spanish chicken pie is full of bold flavours and makes an excellent quick meal.

Method

  1. Heat the olive oil in a saucepan
  2. Saute the onion until softened
  3. Add garlic and saute for about 10 seconds
  4. Add canned tomatoes and smoked paprika
  5. Gently cook for 10-15 minutes
  6. Remove from heat and add cooked chicken, roasted capsicum and olives
  7. Place tomato mixture in the bottom of a high sided pie dish
  8. Carefully spoon mashed potato over the top
  9. Heat oven to 200°C
  10. Place pie in oven and bake until the top is golden brown and crispy
