Banana Pikelets
- Mix together the mashed banana with the egg
- Heat a large non-stick or well seasoned cast iron frying pan and add oil
- Cook pikelets in tablespoon amounts until browned on each side

- Heat slowly over a low heat until berries are cooked and most of the liquid has evaporated
