Bran and date muffins

Method

  1. Pre-heat oven to 180°C and grease a 12 cup, medium sized muffin tray
  2. Mix the eggs, oil, yoghurt, milk, brown sugar and dates
  3. In a separate bowl sift the flour, bran flakes and baking soda
  4. Mix the dry ingredients into the wet ingredients gently until just combined
  5. Spoon mixture evenly into a greased muffin tray
  6. Bake for approximately 15 minutes or until browned and a skewer can be inserted and comes out clean
  7. Turn out onto a wire rack to cool
  8. Store in an airtight container for up to 4 days at room temperature or freeze for up to 1 month.
