Cauliflower tabbouleh

A vegetable version of a wheat based classic. Ideal as a side salad or a one bowl meal.

Method

  1. Place the cauliflower in a food processor in small batches and pulse blend until it resembles couscous
  2. In a large frying pan heat the oil and sauté the cauliflower and garlic over medium heat until soft
  3. Remove from heat and allow to cool
  4. When cool mix through remaining ingredients.

  • 1/4 cup
    fresh mint, chopped finely
  • spring onions, sliced
  • 1 tbsp
    lemon zest
  • 1/4  cup
    lemon juice
  • 1 tsp
    cracked black pepper
  • tomatoes, diced
