Chickpea curry

This great healthy recipe is based on the traditional Indian chana dahl. It's super easy to make and extra tasty. It also freezes well.

Method

  1. Heat oil in a large pot
  2. Sauté onion until soft
  3. Add garlic, ginger, garam masala and curry powder and cook briefly until fragrant
  4. Add chickpeas, tomatoes and lemon juice and cook over low heat until thickened
  5. Turn off heat and stir through the spinach.

    spinach leaves
