Chilli beans with eggs

This is a great meal any time of the day. Easy to make, tasty and filling.

Method

  1. Heat oil in a large pan.
  2. Add chopped onion and cook until soft.
  3. Add chili beans, tomatoes, corn and capsicum and cook until the sauce has reduced and thickened.
  4. Make 4 holes in the mixture and break an egg into each.
  5. Cover with a lid and cook over low heat until the eggs are cooked, approximately 7-10 minutes.
