Cottage cheese bowl with BBQ veg, olives and pesto

Method

  1. BBQ, grill or stir-fry the beans and capsicum over a high heat until they are beginning to blacken
  2. Remove from heat and place in a mixing bowl along with the pickled onion, olives and pesto and mix well
  3. Place cottage cheese in serving bowls and top with vegetables
  4. Sprinkle the nuts over the top and serve with wholegrain bread.

Tips

  • Pesto is easy to make and a great addition to have on hand for a quick meal. It also keeps well frozen
  • Pickled vegetables are another great standby to lift the flavours of a meal.

    sliced pickled onion

    sliced olives
  • 1 tbsp
    pesto
