Curried pork lap lap

This tasty dish is based on a traditional recipe from Vanuatu. It’s full of flavour and goodness that the whole family can enjoy.

Method

  1. Heat oven to 200°C
  2. In a large bowl mix together all of the ingredients except for the banana leaves
  3. Divide the mixture between the two 25cm square banana leaves or pieces of baking paper and fold over to make an enclosed parcel
  4. Place parcels on a baking tray or roasting dish and bake for 30 minutes
  5. Remove from oven and served wrapped

Tip

Freeze the leftover coconut cream in ice cube trays.

    grated pumpkin
  • 2 tbsp
    coconut cream
  • 2 tsp
    curry powder
  • 200 g
    pork mince
  • spring onion, finely sliced
  • 1 cup
    chopped silverbeet or spinach
  • 2 tsp
    soy sauce
  • banana leaves or baking paper
