Easy beef curry

This tasty beef curry recipe is easy to make and can be prepared a day in advance for a convenient meal.

Method

  1. Heat oil in a large pot
  2. Add beef and cook over a medium to high heat, brown well on each side
  3. Remove beef from the pot and reduce the heat to low
  4. Add onion and carrot and sauté until soft and beginning to brown
  5. Add garlic, curry powder and garam masala and sauté briefly
  6. Add canned tomatoes and water
  7. Bring to a gentle simmer
  8. Cover and cook slowly for approximately 2 hours or until the beef is tender
  9. Add ½ cup of water if it looks to be drying out too much
  10. Add the cauliflower and cook for a further 15-20 minutes or until tender
  11. Serve with brown rice and coriander sprinkled on top.

Tip

This recipe can also be cooked in a slow cooker.

For best results use a pot on the stove and follow the recipe above up until the tomatoes and water are added. At that point transfer all ingredients into the slow cooker and cook as per instructions on the slow cooker.

You could also place all ingredients into the slow cooker from the beginning and cook, however the flavour won't be quite as rich.

    chopped cauliflower
  • 1/4 cup
    chopped fresh coriander
