Feijoa fizz

Feijoa skins hold a lot of flavour, but eating them isn’t always that much fun. So how about making them into something that is fun and yum.

Method

  1. Place feijoa skins, water, first measure of sugar and yeast in a jar
  2. Secure a cloth or tea towel over the top of the jar with a rubber band to prevent insects getting in, while allowing air flow in and out
  3. Place somewhere warm for 2 days until you see small bubbles beginning to form 
  4. Strain the liquid into a 1.25L bottle with the 1 tsp of sugar and screw on a tight-fitting lid
  5. Leave at room temperature for 2 hours then refrigerate and serve. 

Tips

While some recipes rely on the natural yeasts present on the skins of feijoas for the fermentation, this is sometimes unreliable.  We add yeast to ensure it gets fizzy quickly.
