Fish baked with tomato and olives

This delicious dish has been adapted from a Jamie Oliver recipe. It's super easy to make and tastes great. The whole family will enjoy this.

Method

  1. Preheat oven to 210°C
  2. Heat oil in a saucepan
  3. Add onion and sautee until soft
  4. Add garlic and sautee for 10 seconds
  5. Add whole peeled tomatoes and balsamic vinegar
  6. Break up the tomatoes slightly but leave them in large pieces
  7. Add olives and simmer for approximately 15 minutes
  8. Cut hoki fillets in half
  9. Pour tomato sauce into a roasting dish
  10. Place hoki pieces on top of tomato sauce
  11. Sprinkle pepper over hoki
  12. Cook in oven for approximately 10-15 minutes or until just cooked through
  13. Shred basil and sprinkle over hoki and tomato sauce
  14. Serve
