Fruit crumble slice

This is a delicious fruit slice perfect for lunchboxes or at home.

Method

  1. Preheat oven to 180°C 
  2. Place apple, berries and water #1 in a pot, cover with a lid and cook until soft 
  3. Dissolve cornflour in water #2, then slowly pour into fruit to thicken before removing from the heat 
  4. Mix milk, eggs and oil together 
  5. Mix flour, baking powder, rolled oats, cinnamon, coconut and sugar together 
  6. Combine milk mixture with flour mixture 
  7. Grease a 25cm x 25cm slice tin 
  8. Spread ⅔ of the slice mixture evenly over the slice tin 
  9. Spread fruit mixture on top of the slice mixture 
  10. Evenly distribute remaining slice mixture over top of the fruit, dropping small pieces by hand 
  11. Bake for approximately 30 minutes or until golden brown and cooked through 
  12. Cool in the tin before cutting into 5cm x 5cm pieces 
  13. Store in refrigerator.
