
Kumara salad
This tasty salad will go well with many dishes including fish, chicken or a vegetarian meal

Method
- Steam or boil the kumara until cooked through then drain and allow to cool
- To make the dressing mix together the lemon juice, yoghurt, mayonnaise and curry powder
- Gently mix together cooked kumara, banana or apple, spring onion, sesame seeds and the dressing
Tip
To toast sesame seeds heat them in a dry frying pan over a medium heat. Stir with a wooden spoon until lightly golden brown then remove from the pan.
