Marinated raw salmon with carrot salad

This is a stunning dish that is as delicious as it is beautiful.  It's also super easy to prepare and have ready ahead of serving

Method

Marinated raw salmon

  1. Cut salmon into 1cm cubes
  2. Mix with ginger, soy sauce, mirin and wasabi and refrigerate for approximately 1-2 hours before serving
  3. Serve with shredded nori as a garnish

Carrot salad

  1. Mix sliced carrots, rice vinegar, sesame oil, toasted sesame seeds, miso and mirin together and refrigerate for up to 3 hours before serving
  2. Just prior to serving mix through the snow pea shoots

    carrots, finely sliced

    rice vinegar
  • 1 tsp
    sesame oil
  • 1 tbsp
    sesame seeds, toasted
  • 1 tbsp
    miso paste
  • 1 tbsp
    mirin
  • ½ cup
    snow pea shoots
