Microwaved fish with vegetables

This microwaved fish recipe can be prepared in advance and refrigerated until you're ready to cook and eat it. Super easy and very tasty!

Follow these simple steps to make the recipe

Method

  1. Mix together the ginger, lemon juice, fish sauce, sweet chilli sauce and sesame oil (optional)
  2. Place the carrot and courgette ribbons in a shallow microwave proof dish and cover with sliced capsicum
  3. Lay the fish fillets over the top
  4. Pour sauce over the top of the fish
  5. Microwave on high for 2 minutes then repeat for 2 minutes at a time until the fish is cooked through
  6. Garnish with chopped coriander
