Method

  • Heat oil in a large pot
  • Add onion, carrot and celery, cook over a low heat until soft
  • Add garlic, kūmara, tomato paste and water and bring to a simmer, cook for 30 minutes
  • Add mussels and cover with a lid, bring to a simmer and cook until all the mussels have opened
  • Mix through lemon juice.

Tip

  • Discard mussels that are open before cooking
  • Discard mussels that don’t open after cooking.
