Okonomiyaki - Japanese cabbage fritters

This is a great lunch or dinner option that can be whipped together with ease.

Method

  1. Mix the cabbage, spring onion, miso paste and breadcrumbs in a large bowl until well combined
  2. Beat the eggs and mix through
  3. Heat a large frying pan over a low to medium heat and add oil
  4. Place cabbage mixture in middle of pan in one large pile and cook slowly on one side
  5. When golden brown on the underside, approximately 5 minutes, flip over and continue to cook
  6. Press down on the top of the fritter to compress the filling and flatten
  7. Continue to cook for another 5- 10 minutes until golden brown and cooked through
  8. Place on serving plate and top with selected toppings of your choice.

Tips

These fritters can take a little while to cook all the way through, which makes it important to keep the temperature low so they don’t burn.

Any meats and other finely shredded vegetables can go in the mix, use whatever you have and like.
