Pancakes with berries and banana

These pancakes are light and fluffy and perfectly matched with the fruity topping

Method

Berries

  1. Place berries in a saucepan and heat with lid on slowly until soft and liquid has run out of the berries
  2. Remove lid and continue to cook until the berries are soft and cooked to your preference

Pancakes

  1. Separate the eggs
  2. Whisk the whites until they form stiff peaks
  3. Mix together the egg yolks, milk, wholemeal flour, white flour and baking powder and beat until smooth
  4. Gently fold the beaten egg whites into the pancake batter
  5. Heat a frying pan and add a little oil
  6. Cook the pancakes in the pan until golden brown on each side

To serve

Serve with the berries, plain, unsweetened yoghurt and bananas. You can either serve the bananas raw or grill them.  To grill the bananas simply cut through the middle and place on a hot frying pan until golden brown

Tip:

This recipe can make great pikelets as well, simply cook in 1 tablespoon amounts until browned on each side.
