Haloumi and broccolini pasta

Stuck for ideas for work lunches? This orzo pasta salad is a great meal you can have hot or cold. Have it for dinner or the following day in a lunch box.

Method

  1. Bring a large pot of water to a boil and cook the pasta for approximately 7 minutes
  2. Add the broccolini and cook for a further 3 minutes until the pasta and broccolini are just cooked
  3. Drain and set aside
  4. Slice the haloumi into 1cm thick slices
  5. Heat a frying pan and cook the haloumi on each side until browned
  6. Remove from the pan and chop into smaller pieces
  7. Place cooked pasta, broccolini, haloumi, cherry tomatoes and pumpkin seeds in a large bowl and mix to combine
  8. In a separate bowl mix the garlic, olive oil, lemon juice and pepper to make the dressing
  9. Mix the dressing through the pasta and serve.

    pasta, any assorted shape (we recommend orzo or gemelli/spirals)
  • 4 cups
    roughly chopped broccolini
  • 100 g
    haloumi cheese
  • 1 1/2 cups
    cherry tomatoes
  • 1/4 cup
    pumpkin seeds
  • 1 clove
    garlic, crushed
  • 3 tbsp
    olive oil
  • 3 tbsp
    lemon juice
