Poached mini meatballs

These poached mini meatballs are perfect for children.

Method

  1. Place mince, egg, bread crumbs, carrots, onion, parsley and tomato sauce into a bowl and mix together until combined, using clean hands
  2. Heat oven to 200°C
  3. Use your hands to shape the beef mixture into balls about the size of a golf ball
  4. Place on a baking tray and bake until browned and cooked through
  5. Toast the bread. Divide cheese between each slice of bread and bake in preheated oven until cheese has melted. Remove from oven and allow to cool on a cooling rack. Slice into 2 cm squares to create cheese croutons
  6. Divide the salad greens, red onion, tomato and cucumber between serving plates, then top with mini meatballs and cheese croutons.
