This is a take on the traditional leek and potato soup. A small amount of smoked fish goes a long way in this recipe.

Method
- Heat oil in a large pot
- Add leek and cook gently until softened
- Add garlic and potato and sauté for one minute
- Add water and stock powder and cook until potato is soft
- Remove from heat and blend until smooth
- Add evaporated milk, smoked fish and parsley
- Bring back to heat and serve
