Roast beef with hash browns and emerald sauce
You can use any roasting cut of beef or for that matter lamb or venison. Any roasted red meat will come to life with the emerald sauce.

Method
Hash browns
- Heat oven to 200C
- Squeeze out excess liquid from grated potato
- Press grated potato firmly into a greased mini muffin tray (or use large muffin tins and press in until 1/3 full)
- Bake in oven for approximately 45 minutes or until tops are lightly browned
Emerald sauce
- Mix all ingredients together or blend for a smoother sauce
Roast beef
- Heat oven to 200C
- Rub beef lightly with oil
- Heat a frying pan over medium to high heat
- Brown beef in pan on all sides
- Place on a roasting rack above a roasting dish and bake for approximately 20 minutes per 500g meat, or follow the guidelines here
- Remove from oven and leave to rest in a warm place for approximately 15 minutes before slicing and serving
- Slice thinly across the grain of the meat
This meal is also great served with some lightly roasted cherry tomatoes or steamed greens
