Roast chicken with plums

The juicy sweet plums pair perfectly with the delicious roast chicken.

Method

  1. Place the chicken, 5 spice, ginger, chilli, sesame seeds, vinegar, soy sauce and sesame oil in a large bowl and mix well until all the chicken has been coated
  2. Cover and refrigerate for at least 2 hours or overnight to marinade
  3. Pre-heat oven to 180°C
  4. Place red onions and plums in a roasting dish and mix with the water
  5. Place chicken on top
  6. Bake for approximately 1 hour or until the chicken is golden brown and cooked through

Tips

  • Serve with brown rice and steamed seasonal green vegetables.
  • If you prefer not to have chunky plums and onions, simply blend to make a delicious plum sauce to serve with the chicken.
