Roasted stone fruit crumble with berry coulis

A great dessert full of all the flavours of summer, easy to prep ahead of time for an at-home treat or to take to a dinner party.

Method

Roasted fruit 

  1. Pre-heat oven to 200°C. 
  2. Spread fruit out in a roasting dish. 
  3. Place boiling water in a small bowl and add the honey and vanilla essence. Mix to dissolve the honey. 
  4. Pour this mixture over the fruit. 
  5. Place in oven and roast for approximately 30 minutes or until golden brown. 
  6. Remove from oven and set aside. 

Crumble 

  1. Pre-heat oven to 175°C. 
  2. Beat the egg and oil. 
  3. Mix dry ingredients together and mix through egg mixture. 
  4. Spread mixture evenly over a large roasting tray. 
  5. Bake for approximately 30 minutes, mixing often and breaking up any large lumps, until crunchy and golden brown. 
  6. Remove from oven and allow to cool before serving. 

Berry sauce (coulis) 

  1. Place fresh or frozen berries into a saucepan with water and cover with a lid. 
  2. Heat slowly over a low heat until berries are cooked and most of the liquid has evaporated. 
  3. Let the berries cool and then puree with a blender or wand to make a smooth sauce. 

To serve 

Place roasted fruit in a serving bowl then sprinkle with crumble mixture and pour over the sauce. 

Tips

All three components of this dessert can be cooked separately and stored for several days before serving. Keep the roasted fruit and coulis in the fridge and the crumble mixture in a sealed container in the pantry.
