Roasted tomato and sunflower seed sauce

A very easy, delicious and nutritious sauce that’s great with just about anything.

Method

  1. Preheat oven to 200°C
  2. Place tomato, garlic and onion in a roasting dish and drizzle with oil
  3. Roast for approximately 30 minutes or until beginning to brown
  4. Sprinkle sunflower seeds over the top and return to the oven for a further 10 minutes or until the sunflower seeds are lightly browned
  5. Remove from the oven and place in a blender with the remaining ingredients
  6. Blend until smooth

Tips

  • This sauce is great served with a variety of foods including, boiled eggs, grilled meats, pasta, fish, or steamed vegetables.
