Sweet and sour vegetables

Here's a quick and easy sweet and sour vegetables recipe that uses just a few ingredients. It's ready in less than half an hour too - what's not to like?

Method

  1. Whisk the pineapple juice, soy sauce, tomato sauce, vinegar, water, cornflour and ginger in a medium saucepan until there are no lumps
  2. Turn heat on and bring to a gentle simmer, stirring constantly until thickened
  3. Add pineapple pieces and frozen vegetables and increase heat. Stir often and heat the vegetables until hot
  4. Remove from the heat and allow to cool.
     
  • 1 can 
    pineapple pieces in juice (440g), drained with juice reserved
  • 2 tbsp
    soy sauce
  • 2 tbsp
    tomato sauce
  • 2 tbsp
    white vinegar
  • 1/2 cup
    water
  • 1 tbsp
    cornflour
  • 1 tbsp
    finely chopped ginger
  • 6 cups
    frozen stir-fry vegetables mix (1x750g bag)
