Upside down orange cakes

These tasty morsels have no added sugar and are a great dessert for any occasion.

Method:

  1. Preheat oven to 180°C 
  2. Chop 2 oranges with skin on into small pieces and place into food processor with eggs, oil, almonds and baking soda 
  3. Blend until smooth 
  4. Peel the other orange and slice into 12 slices 
  5. Place a slice of orange into each cup of a greased 12 medium cup muffin tray 
  6. Spoon mixture on top of orange slices 
  7. Bake for approximately 20 minutes or until springy to the touch and beginning to brown 
  8. Turn out onto a wire rack to cool 
  9. Keep refrigerated or serve warm
