Veg-up noodles

Noodles are loved by people of all ages and for good reason — they’re delicious. Work this versatile noodle recipe into your meal plan for the week. It's got lots of vegetables added!

Yum! This veg-up noodle recipe will quickly become a favourite!

Method

  1. Cook noodles following the appropriate method on the back of the packet.
  2. Heat oil in a wok or large frying pan over low heat, add onion and cook until softened.
  3. Add garlic and ginger and cook for 2-3 minutes.
  4. Add tofu (if using) and stir fry over medium heat until tofu begins to brown.
  5. Add capsicum, broccoli, green beans, cooked noodles, soy sauce and lemon juice, and stir fry for 2-3 minutes.
  6. Spoon into a bowl, garnish with coriander (if using) and serve.

Tip

Use any dried noodles such as; Chinese vermicelli, soba noodles, udon noodles, rice noodles or 2-minute noodles.

    capsicum or carrot, sliced
  • 1/2 cup
    broccoli or cauliflower or courgette, cut into bite sized pieces
  • 1/2 cup
    green beans, sliced
  • 1 tbsp
    soy sauce
  • 1 tbsp
    lemon juice
  • 1/4 cup
    roughly chopped coriander
