Vege puffs

These tasty treats can be made with any cooked vegetables and are great for lunch boxes.

Method

  1. Preheat oven to 200°C
  2. Mix all ingredients together
  3. Drop tablespoon sized lumps of batter on a greased baking tray 
  4. Bake for approximately 10-15 minutes or until golden brown and crispy around the edges.

Tip

The quantities for this recipe are based on two vege puffs per portion.

    chopped cooked vegetables (eg. Kumara, pumpkin, broccoli, cauliflower)
  • 1/2 cup
    grated cheese
  • 1/4 cup
    chopped parsley
  • 1 clove
    garlic, crushed
  • eggs
  • 1 tsp
    curry powder
  • 1/2 tsp
    baking powder
  • 1/4 cup
    flour
