Baked salmon with summer vegetables and a pesto crumb

This divine baked salmon recipe will make a beautiful centre piece for a special occasion or just a fabulous meal.

Method

  1. Preheat oven to 200°C
  2. Place onion, courgette, lemon and oil in a large roasting dish and mix thoroughly
  3. Roast for approximately 20 minutes or until vegetables are beginning to brown then remove from oven
  4. Blend the bread in a food processor to create fresh breadcrumbs
  5. Add garlic, pesto and parsley and blend until combined
  6. Place salmon fillet on top of roasted vegetables
  7. Spread crumb mixture over salmon
  8. Return to oven and continue to cook for 15-20 minutes, or until the salmon is cooked through and the crumb mixture is beginning to brown.

Tips

  • Basil pesto is great in this recipe, but for something a little different try our watercress pesto.
