Chicken pasta salad

Here’s a great salad recipe to turn a cooked chicken into a filling meal for the family.

Method

  1. Bring a large pot of water to a boil and cook the pasta for approximately 10 minutes or until just soft
  2. Drain the pasta and allow to cool for 10 minutes
  3. In a large bowl add the pasta and all remaining ingredients, mix until combined and serve

Alternatively:

  • Use 1 tablespoon dried herbs in place of fresh herbs.
  • Use shredded kale, spinach or other salad leaves in place of lettuce.
  • To make this dish feed more people, add 1 can of chickpeas.

    shredded cooked chicken
  • 1/2 cup
    grated cheese
  • 1/2 cup
    fresh herbs, chopped
  • 2 cups
    sliced lettuce
  • 1/4 
    red onion, peeled and finely chopped
  • tomatoes, diced
  • 2 tbsp
    lemon juice
  • 3 tbsp
    plain unsweetened yoghurt
