Courgette fritters

Here's a quick healthy snack you can make in a hurry. This courgette fritter recipe only needs a few ingredients and is ready in less than half an hour.

Method

  1. Squeeze as much liquid as possible from the grated courgette and place the courgette in a large bowl
  2. Mix the grated courgette with the spring onion, eggs, flour and baking powder
  3. Heat the oil in a large frying pan and cook tablespoon amounts of the batter until browned on both sides and cooked through.
